Simple Grilled Vegetables with Italian Sausage

June 2009 064There is nothing better than a simple and easy to prepare meal.  I went to my parents’ house for Father’s Day and my Mom (also gluten free) prepared a simple and delicious meal of grilled peppers and onions with Italian Sausage.  While at their house, I realized that I often tell you to grill your veggies in a grill pan, and I never have showed you what a grill pan looks like.  The picture to the right is what I use.

Here are the rules of the kitchen that my mother taught me when I was growing up. 
1.  Start with a clean kitchen
2.  Make sure you have all the ingredients before you begin cooking
3.  End with a clean kitchen

Ingredients
1 red pepper, stem and seeds removed, and sliced
1 yellow onion, sliced
2 teaspoons olive oil
1 teaspoon kosher salt
1 teaspoon each fresh basil, thyme and parsley, chopped
1 package gluten free bratwurst or Italian Sausage
1 package gluten free hot dog buns, optional

To prepare:
Cut up the vegetables.  In a large bowl toss the vegetables with the olive oil, salt and herbs. 
Heat grill to medium heat.  Place vegetables in the grill pan and cook, stirring occasionally, until sausage is cooked through. 

While cooking the veggies, cook sausage on the grill over medium heat until cooked through (approximately 10-15 minutes).  Serve on warm buns with mustard.

Garbanzo Bean Salad with Lemon Dressing

This delicious summer salad can be served anytime of the year.  My kids think these legumes are fun to eat and they love the nutty flavor.  Garbanzo beans are a great source of protein and both soluble and insoluble fiber.  You can purchase garbanzo beans (chickpeas) in cans or dried.  lemon

For the Salad:
2 13 oz. cans garbanzo beans, drained and rinsed
2 medium sized tomatoes, diced
4 green onions, thinly sliced
1 green pepper, diced
4 Tablespoons fresh parsley, chopped

For the Dressing:
 3 Tablespoons fresh lemon juice
2 garlic cloves, crushed
4 Tablespoons olive oil
1 teaspoon lemon zest
salt and pepper to taste

Prepare and combine all of the salad ingredients in a large bowl. 

Combine the dressing ingredients in a container with a lid and shake thoroughly.  Salt and pepper to taste.  Pour the dressing over the salad and refrigerate for 1 hour, allowing the flavors to combine well.

Artichoke and Pesto Pizza

Tonight we wanted to make pizza on our Gluten Free Creations multi-grain crust.  I didn’t have many ingredients in the house but we did have a jar of artichokes and some parmesan cheese.  The pizza was delicious.  The perfect combination of caramelized vegetables, pesto and parmesan cheese.  Sorry there is no picture – I can’t find my camera charger!

Ingredients:
4 Tablespoons olive oil
1/2 red onion, sliced thin
1/2 orange pepper, diced
1 jar artichokes
2/3 cups pesto
1/2 cup shredded or shaved parmesan cheese
1/2 cup fresh Italian herbs (oregano, basil, rosemary, etc…), chopped
2 8″ GF pizza crusts

Heat a medium saute pan over medium heat.  Add the olive oil and the vegetables.  Saute until soft and slightly caramelized. 

Spread half the pesto on each pizza crust.  Top the pesto with the vegetables.  Sprinkle the chopped herbs over the vegetables.  Sprinkle the cheese on top of the herbs.

Bake as directed on the pizza crust.

Pesto Pizza

pesto ingredientsPizza has changed dramatically at our house since I can’t eat tomatoes anymore.  I think we all agree – it is even better!  Today my shipment of Gluten Free Creations multi-grain pizza crust arrived.  I LOVE this crust!  However, you can create this pizza on any GF crust.  Here is what we created…

Pesto Pizza

We used 3 8″ crusts.

3/4 pounds Italian Sausage
1 red pepper, diced
1/2 red onion, sliced thin
3/4 cup prepared pesto
1 1/2 cups mozzarella cheese, shredded (we use goat mozzarella)
3 teaspoons dried oregano
3 teaspoons dried basil
kosher salt

Prepare oven as directed on crust package.

In a large saute pan, saute Italian sausage.  If using very lean meat, add a small amount of olive oil to coat pan.  Once sausage is cooked, add onions and peppers and cook until soft (approximately 10 minutes). 

Place pizza crusts on cookie sheet.  Top each crust with 1/4 cup pesto and spread evenly.  Divide the toppings in thirds and place on top of pesto. 

Sprinkle 1/2 cup of cheese on each pizza.  Sprinkle 1 teaspoon of dried oregano and basil on each pizza.  Add salt if desired.

Bake as described on crust package.  Serve with a great GF beer or a glass of red wine.
