Pesto Pizza

pesto ingredientsPizza has changed dramatically at our house since I can’t eat tomatoes anymore.  I think we all agree – it is even better!  Today my shipment of Gluten Free Creations multi-grain pizza crust arrived.  I LOVE this crust!  However, you can create this pizza on any GF crust.  Here is what we created…

Pesto Pizza

We used 3 8″ crusts.

3/4 pounds Italian Sausage
1 red pepper, diced
1/2 red onion, sliced thin
3/4 cup prepared pesto
1 1/2 cups mozzarella cheese, shredded (we use goat mozzarella)
3 teaspoons dried oregano
3 teaspoons dried basil
kosher salt

Prepare oven as directed on crust package.

In a large saute pan, saute Italian sausage.  If using very lean meat, add a small amount of olive oil to coat pan.  Once sausage is cooked, add onions and peppers and cook until soft (approximately 10 minutes). 

Place pizza crusts on cookie sheet.  Top each crust with 1/4 cup pesto and spread evenly.  Divide the toppings in thirds and place on top of pesto. 

Sprinkle 1/2 cup of cheese on each pizza.  Sprinkle 1 teaspoon of dried oregano and basil on each pizza.  Add salt if desired.

Bake as described on crust package.  Serve with a great GF beer or a glass of red wine.

Gluten Free Dining

Today I attended the Outback Steakhouse Manager’s Meeting in Crystal Lake, Illinois.  This was a meeting of all of the General and Kitchen Managers.  They were getting together to learn about gluten intolerance in honor of Celiac Awareness month.

I knew Outback had a gluten-free menu, but I had no idea how seriously they take their gluten-free business.  It was eye-opening and amazing!  I would go eat at any Outback and feel safe.  They have thoroughly trained their employees (through meetings and videos) and have an amazing menu.  I also didn’t realize that the reason they open up at 4pm is so they can make everything fresh each day.

I ate the Chicken Cobb Salad (in a dijon poppy dressing) and it was delicious.  They also sent me home with a bag of the brownies that are used in one of their many GF desserts.  I felt it was my duty to try the brownie before serving it to my family and I proceeded to eat the whole thing!  Very yummy!!!!  It was moist and chocolatey and phenomenal. 

Feel free to take your GF kids too.  They even have a GF kids menu.
