My kids thought this was the best quinoa they have ever tasted. I think that is very funny because I make quinoa at least one time per week and this was the easiest of any of the recipes. This is a wonderful recipe if you have leftover vegetables from a veggie tray. Feel free to add any vegetables you have around. You can also replace the raisins with other dried fruit. I think dried cranberries or cherries would be delicious.
Serves 12
4 cup cooked quinoa
1 cup fresh herbs, chopped (we used parsley, basil, dill, thyme, oregano)
1 red pepper, chopped
1 cup shredded carrots, chopped
1/2 cup red onion, chopped
1 cup raisins
1/2 cup GF Italian salad dressing
Place all ingredients in a large bowl and mix together. Add more salad dressing if you need more flavor. You could also add pinenuts or slivered almonds for a nice touch.
